EASY SOURDOUGH DINNER ROLLS
In this video, I show you an easy recipe for sourdough dinner rolls that can be made within a single day.
INGREDIENTS
150g Sourdough Starter
350g ( Cups) Bread Flour
50g ( Cups) Whole Wheat Flour
4oz Whole Milk
1 Egg
30g Sugar
1.5 Tbsp Butter
7g Salt
2-3oz Water
1 Tbsp additional water for lining bowl
STEPS
Mix all ingredients and knead slightly (either by hand or using stand mixer)
Let rest at 82F for 30 minutes.
Perform a set of stretch and folds
Let rest at 82F for 1 hour.
Perform a set of coil folds.
Let rest at 82F for 1 hour.
Divide into 14 pieces and shape each into a taught ball, then place into a 10” cast iron skillet or other similarly-sized baking pan.
Let rise at room temp (~75F) for about 1.5-2 hours, until the rolls have grown in size by about 50%, and spring back slowly when poked.
Brush the tops of the rolls with an egg wash, and optionally, sprinkles the tops of the rolls with coarse salt.
Bake at 400F for about 18-22 minutes until the rolls are golden brown.
Melt 1 Tbsp of butter, and dissolve a bit of salt into it.
Brush the melted butter across the tops of the rolls, and if desired, sprinkle with additional salt.
SAMPLE BAKING SCHEDULE
8:00AM - Mix levain
1:00PM - Mix dough and begin bulk fermention
1:30PM - Perform set of stretch and folds
2:30PM - Perform set of coil folds
3:30PM - Divide and shape dough, then place into pan for final proof
5:00PM - Bake rolls
